I missed these, and am happy to have found a great substitute.

Recipe Ingredients for Dilly Veggie Turkey Burgers

1 1/2 cup cannellini beans
1/2 cup brown rice
1 cup water
1/2 onion, chopped
1/2 lb mushrooms, chopped
1 cup breadcrumbs
1 tbsp mustard (dill mustard if available)
1/4 dill pickle, finely chopped
1 tsp fresh dill, chopped
1 egg
1/4 cup mozzarella cheese, shredded

Recipe Directions for Dilly Veggie Turkey Burgers

  1. Bring the brown rice and water to a boil in a saucepan over high heat. Reduce the heat to medium-low, cover, and simmer until the rice is tender, and the liquid has been absorbed, 45 to 50 minutes.

  2. Mash beans in a large bowl with a fork until thick and pasty; set aside.

  3. Place the onion, and mushrooms in the bowl of a food processor, and chop finely. Stir the mixture into the mashed beans.

  4. Place the brown rice and mozzarella cheese in the food processor, and process until combined. Stir the mixture into the beans.

  5. Whisk together the eggs, dill, mustard and pickle. Stir the egg mixture into the bean mixture. Stir in the bread crumbs, adding additional bread crumbs as needed until the mixture is sticky and holds together.

  6. Divide into 6 large patties.

  7. Place patties in a pan heated over medium-high heat. Cook until browned and heated through, about 8 minutes per side.
