A cheap and easy, but delicious recipe if you have some spare summer squash that you need to cook. Perfect if you're craving something hearty, but don't have the time or energy to prepare anything involving meat.

Recipe Ingredients for Dilled Zucchini

1 cup Rice, White, Long-grain, Regular, Cooked
1 cup slices Squash, Summer, Zucchini, Includes Skin
1 cup chopped Red Onion
0.06 cup Olive Oil
1 tsp Dill Weed, Dried
1 serving Balsamic Vinegar
1 clove Garlic
0.33 cup cherry tomatoes Tomatoes, Red, Ripe

Recipe Directions for Dilled Zucchini

Sautee the vegetables (onion, zucchini, garlic) in olive oil, prepare rice, pasta, or quinoa for the side. Once the vegetables are quite tender, add the balsamic vinegar, dill weed, and tomatoes. sautee for another minute or two and then serve over rice (or pasta or quinoa).
