Recipe Ingredients for Dilled Seafood Patties

1 can tuna in water, drained
3/4 c canned salmon (1 can, drained)
2 eggs
2 tsp psyllium (powder)
6 scallions, sliced thinly
1/2 tsp dill
2 tbsp mayonnaise
1/4 c quinoa (flakes preferred, but can use cooked)
1 salt and pepper to taste
1 tbsp olive oil, for cooking

Recipe Directions for Dilled Seafood Patties

  1. Beat eggs and psyllium together and let stand 1 minute to thicken. Add all remaining ingredients and mix well. Divide into 8 portions and form into patties.

  2. Heat oil over medium-high heat (350 degrees F on electric griddle). Cook patties until golden brown on one side, about 4-5 minutes; flip and cook until other side is browned.
