Easy to make. I think I got this from a Diane Mott Davidson book (featuring caterer Goldie Schultz--fun books!)

Recipe Ingredients for Dill Potato Salad

12 new potatoes, skin-on
3/4 c light mayonnaise
1/4 c whipping cream
3 cloves garlic
4 green onions, chopped
2 tbsp fresh dill
1 salt to taste
1 ground pepper to taste

Recipe Directions for Dill Potato Salad

  1. Boil potatoes til tender, about 20-30 minutes. Drain water, let cool.

  2. Cut potatoes. I prefer to cut each potato into about 6-10 chunks depending on potato size.

  3. Thin mayo with the whipping cream, then add to potatoes.

  4. Add all other ingredients and mix well. Let chill at least 4 hours to season through before serving.
