Recipe Ingredients for Dijon Thyme Chicken

1/4 cup Extra Virgin Olive Oil
2 tablespoons Extra Virgin Olive Oil
3 tablespoons Dijon mustard
1 small onion, chopped
2 garlic cloves, minced
1 tablespoon minced fresh thyme
1/2 teaspoon crushed red pepper flakes
8 oz boneless, skinless chicken breast halves
1 cup dry bread crumbs

Recipe Directions for Dijon Thyme Chicken

In a bowl, combine the olive oil, mustard, onion, garlic, thyme and pepper flakes. Dip chicken in oil mixture, then coat with bread crumbs. Place in a greased 11-in. x 7-in. x 2-in. baking dish. Bake, uncovered, at 350 degrees F for 30-35 minutes or until chicken juices run clear.
