Recipe Ingredients for Dijon-Terragon Cream Chicken

1/4 cup tarragon
2 tbsp extra-virgin olive oil
1 tbsp butter
1 cup shallots, sliced
3 oz portabella mushrooms
3 1/2 lbs boneless skinless chicken breasts
2 cups fat free half and half
1/4 cup gold medal all purpose flour
1/4 cup white wine
1/2 cup grey poupon dijon mustard

Recipe Directions for Dijon-Terragon Cream Chicken

  1. Prepare the chicken and rub each piece with dijon mustard all over.

  2. Place in dish and marinate in white wine.

  3. Wine should almost cover the top of the chicken.

  4. Allow to sit for at least 1 hour.

  5. Next, chop the tarragon, shallots, and mushrooms and set aside.

  6. When the chicken is ready, prepare a bowl of flour to coat the chicken with before transferring to saucepan.

  7. In saucepan, heat oil and butter over medium-high heat.

  8. Add in the floured chicken and brown on both sides.

  9. Remove the chicken from the pan and set aside.

  10. Pour wine into saucepan to deglaze.

  11. Add in shallots and garlic and cook until the shallots are soft and the wine has reduced to barely covering the bottom of the pan.

  12. Add in the mushrooms and stir until almost cooked.

  13. Next, add in the cream while stirring and then stir in the tarragon until well-blended.

  14. Then, add the dijon mustard and stir until well blended. The sauce should turn a more yellowy-creamy color.

  15. Add in the chicken, reduce heat, cover, and allow to simmer, stirring occasionally for 5-10 minutes (make sure the chicken is cooked all the way through).

  16. Serve and enjoy!
