Dijon and Tarragon Grilled Chicken

Recipe Ingredients for Dijon and Tarragon Grilled Chicken

1/4 cup chopped fresh tarragon
2 tbsp Dijon mustard
2 tbsp dry white wine or vermouth
1 tsp olive oil
1 tsp honey
1 Kosher salt
1 Freshly ground black pepper
3 1/2 units (yield from 3 1/2 pounds) roasting chicken, deboned and butterflied

Recipe Directions for Dijon and Tarragon Grilled Chicken

  1. Mix the chopped tarragon, mustard, wine, oil, and honey together in a small bowl to make a paste.

  2. Place the chicken on a sheet pan, skin side up, and loosen the skin from the meat with your fingers. Place paste under the skin of chicken. Rub any remaining paste on the outside and underside of the chicken.

  3. Turn the chicken skin side down and scatter the lemon slices and sprigs of tarragon over each chicken. Season with salt and pepper. Roll chicken up, cover with plastic wrap and refrigerate for at least 1 hour.

  4. Heat a grill with coals. Spread the coals out in 1 dense layer and brush the grill with oil. Unroll the chicken, place on the grill and cook for 12 minutes on each side.
