Dijon Potato Salad Recipe

A little different from your regular cook-out potato salad.

Recipe Ingredients for Dijon Potato Salad

2 lb red potatoes
2 tbsp dijon mustard
2 tbsp red wine vinegar
2 tbsp chopped dill
2 tbsp chopped tarragon
1 tsp sugar
1/2 tsp fresh ground black pepper
1/2 tsp salt
1/4 c olive oil
1 celery stalk, finely diced
2 green onions, thinly sliced

Recipe Directions for Dijon Potato Salad

  1. Cut potatoes into bite size cubes. Boil about 10 minutes, until just cooked through, not mushy. Drain well and cool.

  2. Combine the mustard, vinegar, dill, tarragon, sugar, pepper and salt in a small bowl. Whisk in oil.

  3. Combine the potatoes, celery and green onions in a large bowl. Toss with the dressing. Serve immediately or cover and refrigerate for up to 2 days.
