This is a lighter version of a classic mustard potato salad. Makes 8 small servings. Warning it is high in salt!

Recipe Ingredients for Dijon Potato Salad

8 potato medium (2-1/4" to 3-1/4" dia) Potatoes, Red, Flesh And Skin, Baked
8 oz Sour Cream Fat Free Grade A Pasteurized Dairy
2 oz Dill Pickles
3 tsp Prepared Dijon Mustard
3 tsp Onion Powder
1 serving Paprika
2 tsp Garlic Powder
2 tsp Salt, Table
0.5 tsp Pepper, Black

Recipe Directions for Dijon Potato Salad

Boil Potatoes with a little salt until fully cooked. Drain and allow to cool. Once cool dice into 1 inch cubes. In a separate bowl Add sour cream and spices. Stir until completely combined. If too thick mixture can be thinned with a little milk or pickle brine. Dice pickles into small pieces. Combine Potatoes, Pickles, and sauce in a medium size mixing bowl and stir together. Chill over night or min. of 4 hours.
