The zesty lemon flavor really shines in this quick and easy pork dish. Adapted from Clean Eating March 2012 p. 44 Dijon Chicken. Serve with Spinach & Lemon Rice

Recipe Ingredients for Dijon Pork

16 oz Pork Chops
1 tsp Paprika
1/2 tsp Sea Salt
1/2 tsp Pepper, Black
1 tbsp Olive Oil
5 3/10 oz Organic Sour Cream
3 tsp Classic Dijon Mustard
15 grams Lemon Juice
3 grams Tarragon

Recipe Directions for Dijon Pork

  1. Sprinkle both sides of pork chops , with paprika, 1/2 tsp salt and pepper. In a large non-stick skillet, heat oil on med-hi. Add pork and cook 5-6 min per side. Remove from skillet and transfer to a large plate. Cover and set aside.

  2. Reduce heat to medium low and add sour cream, dijon, lemon juice and tarragon. Stir until heated through, scraping up browned bits from bottom and sides of skillet with a wooden spoon. Uncover pork and slice into strips. Spoon 1 tbsp. sour cream mixture over top. Dividing evenly. Cover and set aside.
