Dijon Pork from "Comforts of Home Cooking" by Better Homes and Garden

Recipe Ingredients for Dijon Pork

1 1/4 pound boneless pork loin chops
1/4 teaspoon black pepper
1/2 cup fat free reduced-sodium chicken broth
1/2 cup fat free half & half or evaporated fat free milk
7 1/2 teaspoons (2.5 tablespoons) Dijon mustard

Recipe Directions for Dijon Pork

  1. Trim fat from pork chops. Sprinkle both sides with pepper. Lightly coat an unheated large skillet with cooking spray. Preheat over medium heat. Add chops; cook for 4 minutes. Turn chops; cook 4 to 6 minutes more or until pork is brown and juices run clear and an instant-read thermometer inserted in center of chops registers 160 degrees. remove pork from skillet and keep warm.

  2. For sauce: Add chicken broth to skillet, stirring to loosen browned bits. Stir in half & half and mustard. Bring to boiling; reduce heat. Cook, uncovered 5-7 minutes or until sauce is slightly thickened, stirring often

  3. To serve, transfer pork chops to a warm serving platter. Spoon sauce over pork.
