Dijon Pomegranate Pork Tenderloin

Recipe Ingredients for Dijon Pomegranate Pork Tenderloin

1 pomegranate , seeded
1 1/2 lb pork tenderloin
1 tsp thyme
1/2 tsp salt
1/2 tsp pepper
2 tbsp vegetable oil
1 medium onion
2 cloves garlic
3/4 c broth
1/2 c orange juice
2 tbsp orange peel
1 tbsp Dijon mustard
1 tsp cornstarch

Recipe Directions for Dijon Pomegranate Pork Tenderloin

  1. Seed pomegranate, set aside.

  2. Rub pork with thyme, salt and pepper.

  3. In large skillet, heat oil over med heat until hot. Add pork and sear on all sides.

  4. Finish cooking tenderloin in a 350 degree oven until the internal temperature is 155 degrees.

  5. Remove and cover pork in foil. It should increase in temperature to 160 degrees.

  6. Return skillet to stovetop. MAKE SURE YOU USE A POT HOLDER FROM THIS POINT ON.

  7. Add onion and garlic. cook 5-7 minutes until onion is golden.

  8. In small bowl, whisk broth, orange juice, mustard, and cornstarch.

  9. Slice pork into medallions and return to skillet along with orange mustard mixture.

  10. Cook 1-2 minutes until thick.

  11. Stir in pomegranate seeds.

  12. Serve over rice or pasta
