This is a different version of the usual mayonnaise potato salad. Because of the dijon mustard the taste is a lot more strong. It's delicious in the summer and very filling. Not healthy at all though. 4 servings.

Recipe Ingredients for Dijon Mustard Potato Salad

5 potatoes
1 red pepper
3 green onions
1/2 cup mayonnaise
3 tbsp of dijon mustard
1 tsp pepper
1 tsp basil

Recipe Directions for Dijon Mustard Potato Salad

  1. Cook the potatoes for 15 to 20 minutes at medium-high intensity. Do not overcook them. If they're mushy it means you overcooked them.

  2. Dice the red peppers and cut the green onions.

  3. Mix the mayonnaise with the dijon mustard. Add the pepper and basil to the sauce.

  4. After the potatoes have cooled down, dice them. Add the potatoes with the other vegetables.

  5. Mix the salad with the sauce and let sit in the fridge for at least one hour before eating.
