Dijon Salmon Zucchini and Wild Rice

Recipe Ingredients for Dijon Dill Salmon Garlic Zucchini and Wild rice

12 ounce Salmon
2 tsp. dill
1 1/2 tsp dijon mustard
1 1/4 tsp kosher salt
1/8 tsp black pepper
1/4 tsp honey
1 T Shallot
1 T Garlic
1 1/2 cup wild rice, cooked
2 tsp Extra Virgin Olive Oil
1 cup zucchini, half moons

Recipe Directions for Dijon Dill Salmon Garlic Zucchini and Wild rice

  1. In a sauce pan over medium heat, pour 1 tsp of oil saute shallots and garlic. Add rice, heat and constantly stir in the pot for 2 min. Add 3 cups water and 1 tsp salt. Bring to a boil and reduce to a simmer, cook until aldente.

  2. Preheat oven 375

  3. Season Salmon with 1/8 tsp salt and a pinch of pepper. Mix dijon and honey together and spread over salmon.

  4. Place in a baking dish and bake through until 140-145 degrees.

  5. While that's baking, heat a saute pan over medium heat pour in 1 tsp of oil, 1.5 tsp garlic and shallots, saute. Add zucchini and cook through.
