Recipe Ingredients for Dijon Chicken Stew

4 tsp olive oil
2 cups sliced leek
4 garlic cloves, minced
1/3 cup all purpose flour
1 pound chicken thighs, skinless & boneless, chopped
1 pound chicken breast, skinless & boneless, chopped
1/2 tsp black pepper
1 cup dry white wine
3 cups chicken broth, low sodium
1 tbsp all purpose flour
1 1/2 cups water
2 tbsp dijon mustard
2 cups potato, peeled & cubed
8 cups kale, torn

Recipe Directions for Dijon Chicken Stew

  1. Heat 1tsp of the oil in a dutch oven over med-high heat. Add leek; saute for 6 minutes. Add garlic; saute for 1 minute. Transfer mixture to a large bowl.

  2. Place 1/3 cup flour into a sealable plastic bag. Add chicken and shake to coat.

  3. Heat 1 tsp. oil in pan on medium high heat. Add half the chicken mixture. Sprinkle with black pepper. Cook for 6 minutes to brown then remove and add to leek mixture in bowl. Repeat for remaining chicken but leave in pot.

  4. Add wine and stir. Combine 1 cup of the chicken broth with 1 tbsp. flour and whisk smooth. Add broth mixture, remaining broth, water and mustard to pot. Bring to a boil.

  5. Stir in remaining chicken mixture. Add more black pepper if desired. Cover, reduce heat and cook for 30 minutes.

  6. Stir in potato. Cover and simmer for 30 minutes until potato is tender.

  7. Stir in kale, cover and simmer for 10 minutes more.

  8. Enjoy.
