Chicken Stew with Potatoes and Kale

Recipe Ingredients for Dijon Chicken Stew with Potatoes and Kale

4 1tsp Olive Oil
2 medium raw Leeks
4 cloves, raw Garlic
3/10 cup Wheat Flour, White, All-purpose, Enriched, Bleached
32 oz Fresh
1/2 tsp Spices Ground Black Pepper
1/4 tsp Kosher Salt
8 oz Wine
3 serving Swanson Unsalted Chicken Stock
1 1/2 cup (8 fl oz) Water
6 tsp Classic Dijon Mustard
16 oz Potatoes
8 cup, chopped Kale
1/4 tsp Spices Crushed Red Peppers

Recipe Directions for Dijon Chicken Stew with Potatoes and Kale

  1. Heat oil in Dutch oven over med high heat. Add leek and saute 6 min or until tender and golden brown. Add garlic. Saute 1 min. Spoon leek mixture into a large bowl.

  2. Cut chicken into bite size pieces and dredge in flour. Add oil to pan, if necessary, and heat. Add half of chicken mixture. Sprinkle with salt and pepper. Cook 6 min prox, browning on all sides. Repeat with 2nd half of chicken. Add browned chicken to leek mixture..

  3. Add wine to pan, and deglaze, scraping to loosen brown bits. Combine 1C broth and 1T flour, stirring w/ whisk until smooth. Add broth mixture, remaining 2C broth, water and mustard to pan. Bring to a boil. Stir in chicken mixture & salt & pepper to taste. Cover, reduce heat and simmer 30 min.

  4. Peel, skin and cube potatoes. Stir into soup. Cover and simmer 30 min or until potato is tender. Stir in kale. Cover and simmer an additional 10 min. Garnish w/ crushed red pepper.
