This dinner was prepared by my mom for my birthday....she served it with minute white rice

Recipe Ingredients for Dijon Chicken

1 tablespoon Olive Oil
1 Onions
1 clove Garlic
4 Chicken, Meat Only, Roasted
1 Salt, Table
1 Pepper, Black
1 cup Soup, Chicken Broth
2 teaspoons Mustard, Prepared, Yellow

Recipe Directions for Dijon Chicken

  1. Heat 1 tbsp olive oil in a non stick skillet over medium heat. Add 1/2 onion, finely chopped, and cook until the onion becomes tender=4min. Add 1 clove garlic, crushed, and cook 1 min more.

  2. Turn heat to medium high. Season chicken, 4 breasts cut into 1 in strips, with salt and pepper and add to skillet. Saute chicken until golden brown on all sides=4 min.

  3. Quickly add 1/2 c chicken broth with wooden spoon to release any carmelized bits stuck to pan. Cook until broth is reduced by half. Stir in 2 tsp Dijon Mustard.

  4. Serve with rice.
