Excellent salad made from just Celery and Asparagus

Recipe Ingredients for Dijon-Balsamic Asparagus Salad

1 lb asparagus
1 1/2 lb celery
2 carrots
1/4 cup parsley
1/4 cup cilantro
10 g jalapeno
4 tsp dijon mustard
2 tsp soy sauce
1 tsp balsamic vinegar
3/4 tsp oregano
1/4 tsp tarragon
3/4 tsp dried basil
1/4 tsp black pepper
4 g lemon juice
2 tbsp extra virgin olive oil

Recipe Directions for Dijon-Balsamic Asparagus Salad

  1. Heat a small amount of oil in a saute pan over medium high heat. Add asparagus and pan-grill until tender and slightly browned.

  2. In a large bowl, combine asparagus, celery , carrots, parsley, cilantro and jalapeno.

  3. In a small bowl, combine all dressing ingredients, stirring to blend. Pour the dressing over the salad and toss lightly until evenly coated.

  4. Refrigerate for 30 mins before serving, or serve at room temperature. Makes 6-8 servings.
