Makes 6 servings



A tip of the hat to British digestives. Each serving supplies 15% of your daily fiber needs. I use all organic ingredients, sucanat for sugar and red mineral salt.

Recipe Ingredients for Digestive Bisquits, McGumpa's Own

1 1/4 cups spelt flour
1/2 teaspoon baking powder
2 tablespoons oats
1/4 cup olive oil
2 tablespoons sugar
1/4 cup water
1/8 teaspoon salt

Recipe Directions for Digestive Bisquits, McGumpa's Own

  1. Mix dry ingredients with a fork

  2. Add wet ingredients and stir until consolidated.

  3. Kneed until soft and only slightly sticky adding more flour if necessary.

  4. Roll out to about 1/8 inch (0.3 cm) thickness

  5. Cut with round biscuit cutter.

  6. Prick with fork

  7. Bake at 375 F (190 C) for about 20 minutes.

  8. Cool on wire rack.
