Low fat vegetable soup with cabbage

Recipe Ingredients for Diet Soup

1/2 lb carrots, sliced
3/4 lb onions, diced
2 stalks celery, sliced
2 cloves garlic, minced
28 oz can tomatoes, whole and in juice
1/2 lb green cabbage, thinly sliced
6 oz green beans, trimmed and cut into thirds
24 oz chicken broth
24 oz water
10 oz zucchini, sliced into half-moons
6 oz baby spinach
1/2 tsp salt

Recipe Directions for Diet Soup

  1. Coat an 8-10 qt stockpot with nonstick cooking spray. Place over medium-high heat and add carrots, onions, celery and garlic; cook 5-8 minutes until vegetables soften, stirring occasionally.

  2. Add tomaotes with their liquid. Break up the whole tomatoes with your hand or the side of a spoon. Add cabbage, green beans, chicken broth, water, salt and ground black pepper; bring to a boil over high heat, stirring occasionally.

  3. Reduce heat to low; cover and simmer for 8-10 minutes, stirring occasionally.

  4. Stir in zucchini and spinach; cover and simmer another 5-8 minutes or until all vegetables are tender.
