Easy (use frozen broccoli and mirowave for a minutes) and tastes almost like regular quiche with 1/4 the fat!!!!

Recipe Ingredients for Diet-friendly Crustless Broccoli Quiche

3 cups broccoli florets, chopped
1/3 cup onion, chopped
1 tablespoon shallot, finely chopped
7 eggs
1 cup fat free plain yogurt
1/2 cup heavy whipping cream
1 cup mozzarella cheese, shredded
1 salt
1 pepper

Recipe Directions for Diet-friendly Crustless Broccoli Quiche

  1. Saute onion and shallot with non stick spray.

  2. Coat pan with nonstick spray. Place broccoli, onion, shallots, and cheese in pan.

  3. Beat eggs; add in yogurt, cream, salt and pepper, beat. Pour over vegetables in pan.

  4. Place in oven at 375 degrees; bake 30-40 minutes until not runny.
