banana muffins, adapted from Betty Crocker Cookbook.

Recipe Ingredients for Diet Banana Muffins

2 medium bananas
3/4 c soy milk, light
1 large egg
2 c all-purpose flour
1/2 c Splenda
2 tsp baking powder
1/2 tsp salt

Recipe Directions for Diet Banana Muffins

  1. Heat oven to 400 degrees (F)

  2. Spray Pam in muffin pan

  3. In large bowl, beat milk, oil, egg and mashed bananas (about 1 c) with fork or wire whisk until well mixed.

  4. Stir in dry ingredients.

  5. Divide batter evenly among muffin cups.

  6. Bake 20-25 minutes or until golden brown. Let stand about 5 minutes in the pan, then remove to wire rack.
