Recipe Ingredients for To Die For Vegan Mac & Cheese Recipe with Sweet Potato

16 oz Spaghetti, Whole-wheat, Dry
2 large Sweetpotato
1 tsp or 1 packet Mustard, Prepared, Yellow
8 tablespoons Nutritional Yeast
4/5 cup Lemon Juice
3 tablespoons Extra Virgin Olive Oil
1 tsp Garlic Powder

Recipe Directions for To Die For Vegan Mac & Cheese Recipe with Sweet Potato

  1. In a bowl combine the sweet potato, lemon juice, mustard, 4 tbsp nutritional yeast, garlic powder, 2.5 tbsp olive oil and salt and pepper. Mix until thoroughly combined.

  2. Fold cooked noodles into the sweet potato ?cheese?.

  3. Place the mixture into a baking dish.

  4. Sprinkle 4 tablespoons of nutritional yeast over the dish and drizzle with 1/2 tablespoon of olive oil. This will allow the top to crisp while cooking.

  5. Bake in the oven at 400 degrees Fahrenheit for 10 minutes, or until the top begins to brown. Serve and enjoy!
