Completely awesome muffins with a cinnamon sugar crumb topping

Recipe Ingredients for To Die For Blueberry Muffins

2 1/4 c flour
1 c splenda
2 tbsp splenda
3/4 tsp salt
1 tbsp baking powder
1/2 c olive oil
2 eggs
1/2 c milk
1 1/2 c blueberries
3/4 c splenda
1/2 c flour
1/4 c butter
2 tbsp butter
2 1/4 tsp cinnamon

Recipe Directions for To Die For Blueberry Muffins

  1. Preheat oven to 400 degrees

  2. Comine 1 1/2 c flour, 3/4 c splenda, salt & baking powder. Place olive oil into a 1 cup measuring cup; add 1 egg and enough milk to fill the cup. Mix this with the flour mixture. Fold in Blueberries. Fill muffin cups right to the tops, sprinkle with crumb topping mixture.

  3. Crumb Topping Mixture:

  4. Mix 1/2 c Splenda, 1/3 c flour, 1/4 c butter & 1 1/2 tsp cinnamon. Mix with fork and sprinkle over muffins before baking.

  5. Bake for 20-25 minutes in over or until done.
