Delicious fresh veggie soup after a few days of a juice feast or detox diet.

Recipe Ingredients for Dian's fresh vegetable soup

1/2 red onion
5 carrots
2 tomatoes
1 1/2 cup white beans
6 cups vegetable broth
3 cups water
3 cups broccoli
6 new potatoes
3 stalks celery
2 tablespoons grapeseed oil

Recipe Directions for Dian's fresh vegetable soup

  1. Place all ingredients minus the can of white beans into the soup pot.

  2. Sprinkle in the following ingredients to taste: granulated garlic, sweet basil, oregano, red pepper, habanero pepper, celery seed, fresh or dried parsley, smoked paprika and chili powder.

  3. bring to a boil then turn down heat to med-high for 25 minutes.

  4. check to see that you can cut carrot and potato with fork, yet they should still be a la dente.

  5. pour in can of rinsed white beans and turn heat off.
