1 zucchini, chopped
1/4 c onion, chopped
1/4 c red bell pepper, chopped
1/2 c mushrooms, chopped
1/2 c egg beaters
1/4 tsp cajun seasoning

Recipe Directions for Dianne's Veggie Breakfast Egg-travaganza

  1. Melt smart balance.

  2. Chop veggies in bite size pieces

  3. Saute until zucchini is tender crisp

  4. Pour in egg beaters.

  5. Cook until done,stirring and scraping bottom of pan with wooden spatula.

  6. Serve warm with whole grain toast and slice of melon.
