Recipe Ingredients for Dianne's Skinny Tortilla Soup

2 tsp extra-virgin olive oil
1 lb (110516)chicken breast
1 tsp chili powder
2 tsp cumin
4 cloves garlic, chopped
1/4 tsp cayenne pepper
1 large onion, chopped
1/2 large bell pepper, quartered and thinly sliced
1 jalapeno pepper, seeded and thinly sliced
28 ounce fire roasted diced tomatoes
8 oz tomato sauce
56 oz chicken stock
1 cup shredded reduced fat monterey jack cheese
2 tbsp lime juice (1 lime juiced)
4 scallions, chopped
1/4 cup cilantro leaves

Recipe Directions for Dianne's Skinny Tortilla Soup

  1. Saute onion, garlic, jalapeno and bell pepper with olive oil in a large pot until soft

  2. Add all the rest of the ingredients (except scallions and cheese) to the large pot and bring to a boil

  3. After about 15 minutes, remove the chicken breasts and shred by pulling apart with two forks

  4. Return chicken to the pot and simmer an additional 45 minutes

  5. Serve topped with Monterrey Jack cheese, scallions, sliced avocado and crushed tortilla chips.
