Hearty chicken soup with low fat and low carbs

Recipe Ingredients for Dianne's Skinny Chicken Tortilla Soup

2 tsp extra virgin olive oil
2 lbs chicken breast, chopped
1 tbsp chili powder
1 tbsp coriander
2 tbsp thyme, chopped
1 cup onion, chopped
1 cup bell pepper, chopped
1/4 serrano pepper, seeded, chopped fine
16 oz fresh tomatoes, chopped
4 c chicken stock, Pacific, reduced sodium
2 tbsp lime juice
1/4 c cilantro, chopped
1 oz cheddar cheese, reduced fat

Recipe Directions for Dianne's Skinny Chicken Tortilla Soup

  1. Season chicken with salt, pepper, cumin, chili powder, coriander, garlic powder and lime juice. Let sit for 15 to 30 minutes.

  2. Heat a large skillet with 2 tsp extra virgin olive oil

  3. Brown chicken in skillet for 4 to 5 minute, adding coriander, thyme, chili powder and salt, pepper to taste

  4. Add onions, bell pepper and jalapeno. Saute until onions are tender clear.

  5. Add tomatoes and chicken stock.

  6. Bring to a boil, reduce heat and simmer on low 15 to 20 minutes to meld the flavors.

  7. Top eacg bowl of soup with 1/4 oz cheddar cheese.

  8. Serve with tortilla strips - but ADD the calories per the nutrition info on package

  9. Serve with chopped avocado - but ADD the calories per portion of avocado you use.
