use double strength vanilla - 2 teaspoons or 4 of regular vanilla

Recipe Ingredients for Dianna's Vanilla Cake

3/4 cup butter or margarine, softened
3 eggs, separated
2 1/2 cups self rising flour (I use White Lily)
1 3/4 cups sugar
2 teaspoons vanilla (4 teaspoons regular)
1 1/4 cups milk
1/2 teaspoons lemon juice (optional)

Recipe Directions for Dianna's Vanilla Cake

  1. Let butter and eggs warm to room temperature while greasing and flouring 2 9-inch cake pans. Beat butter on medium to high speed until creamy, gradually add sugar, mixing until well blended (about 2 minutes). Add egg yolks 1 at a time, beating after each addition. Beat in vanilla. Alternately add flour and milk, beating after each addition on low until just combined.

  2. Beat egg whites until stiff. Fold into batter by hand until well combined. Pour batter into greased pans.

  3. Bake at 375 for 25 to 30 minutes until a toothpick inserted near the center comes out clean. Let cool on wire rack for 10 minutes and remove from pans. Let cool thoroughly on racks before frosting.

  4. Makes 2 9-inch layers.
