A delicious butternut squash soup that tastes like Christmas meets curry

Recipe Ingredients for Dianna's Butternut Apple Soup

2 cups skim milk
2 leeks
4 tablespoons butter
1 large apple
12 cups butternut squash
4 tablespoons wheat flour
2 teaspoons salt

Recipe Directions for Dianna's Butternut Apple Soup

  1. Saute leeks in butter until soft

  2. Add squash and apple and saute 5-7 min

  3. Mix flour, 2 tsp curry, and 1/4tsp nutmeg and add to coat squash/apple mix. Cook 5-10 min

  4. Add 4c vegetable stock, milk, and orange zest

  5. Simmer for 1 hour.

  6. Puree soup in a processor or blender

  7. Add salt, pepper, sugar to taste.
