Portuguese Sausage & Kale Soup

Recipe Ingredients for Diane's Portuguese Kale Soup

1 lb. red kidney beans
2 lbs. kale
2 lbs. sausage
1 med. onion
5 lbs. potatoes
1 gallon cold water
1 Salt and Pepper to taste
1 tbsp margarine

Recipe Directions for Diane's Portuguese Kale Soup

  1. Peel and chop 1 medium size onion

  2. Sautee chopped onion in 1 tbsp. smart balance margarine until transparent

  3. add diagnolly sliced(preferably 1lb linguica & 1lb chourico) sausage

  4. Sautee sausage until tender and juices are abundant, add paprika for more color

  5. Add cold water and bring to a boil

  6. Reduce heat add potatoes & kale simmer on low in crock pot overnight until potatoes are tender

  7. Add canned kidney beans w/juies continue to simmer in crockpot until tender

  8. Salt & Pepper to taste

  9. Serve with crackers or portuguese sweet bread
