As much as I love Prego, I needed a sauce that tasted more fresh. Although not as thick as store bought sauces, the olive oil, garlic, and pregano bring out the best of tomato in this pasta sauce.

Recipe Ingredients for Diane's Pasta Sauce for the Family

1 tbl Extra Virgin Olive Oil
3 whole tomato, minced
1 whole tomato, diced
2 tbl oregano
2 tsp salt
1/2 cup onion, diced
3 garlic cloves
1/4 cup fresh basil

Recipe Directions for Diane's Pasta Sauce for the Family

  1. Finely chop or mince 3 fresh ripe tomatoes. The key to this sauce is to use organic tomatoes or tomatoes that are really red on on the outside and have green seeds on the inside. As long as the overal tomato has a strong 'tomatoy' taste instead of a watery taste like most pink-toned regular store bought tomatoes.

  2. Dice 1 whole tomato and the onion,and set the tomato aside for later.

  3. Mash 1 unpeeled garlic clove at a time w/ the flat side of a large kitchen knife by smashing your fist down against it. Take off the peel (should be very easy now), cut off the butt, and give the mashed garlic a few chops.

  4. Either hand rip or slice the basil. I'm usually too lazy so wind up slicing the basil.

  5. Heat the pot then toss in the minced tomato. Key is to make sure that the pot is nice and hot before you toss in the tomato. Pre-heated pot will have a hot hair pocket when you toss in tomatoes with it's juices. That way the tomato can slowly cook in it's down juice.

  6. Toss just 1 tbl of oregano and 1 tsp of salt in the pot and stir it. Let the flavor seep into the tomatoes.

  7. Once most of the water is gone, toss in the garlic and diced tomatoes and stir. Wait 5 minutes before tossing in all of the rest of the ingredients.

  8. Let the sauce simmer until most of the water is gone. I found that the olive oil help thickens the sauce so I wait till the last moment where most of the water is gone before tossing in the oil.
