Recipe Ingredients for Diane's Pasta-Free Eggplant Lasagna

1 eggplant, unpeeled (approx 1-1/4 lb) Eggplant
4 cup Low Fat Cottage Cheese
1 large Egg, Whole
20 oz Crushed Tomatoes
113 2/5 grams 50% Light Cheddar
4 oz Fat Free Cheese
2 tsp Garlic Powder
1 dash Pepper, Black
2 tsp Oregano, Ground

Recipe Directions for Diane's Pasta-Free Eggplant Lasagna

  1. Mix crushed tomatos with spices

  2. slice Eggplant in circles very thin. (I used a mandolin)

  3. Mix cheeses with eggs

  4. Spray a casserole dish or Large muffin tin (holds six muffins) with cooking spray. Make two layers of sauce, eggplant and cheese. Top with eggplant and tomatoes.

  5. Bake at 350 till bubbling in the center
