Minestrone soup. Packed with fibre and good stuff. Still under adjustments to make it healthier ;) Tastier if vegetable or chicken broth is used instead of cubes (this would also reduce amount of Sodium). To make it healthier and reduce sugar use home made beans and tomato juice instead of canned version.

Recipe Ingredients for Diane's Minestrone soup

50 grams Carrots, Baby
50 grams Potato
125 grams Squash, Summer, Zucchini, Includes Skin
50 grams Beans, Snap, Green
100 grams Onions
2 clove Garlic
1 stalk, large (11"-12" long) Celery
40 grams Fennel, Bulb
150 grams Tomatoes, Red, Ripe
1 serving Tesco baked beans in tomato sauce
30 grams Ebly
1 tbsp Olive Oil
5 g Vegetable Stock Cubes
250 ml water
1 Salt, Table
1 pepper

Recipe Directions for Diane's Minestrone soup

  1. chop all the ingredients in small pieces (cubes or julienne according to taste)

  2. stir fry the onion and garlic in all the oil in medium heat

  3. add celery and stir for a couple of minutes

  4. add green beans and parsley and stir for a couple of minutes

  5. add fennel and stir for a couple of minutes

  6. add potato and carrots and stir for a couple of minutes

  7. add zucchini and stir for a couple of minutes

  8. add canned beans, cherry tomatoes and water (or stock) to taste and bring to boil

  9. reduce heat and let it slow cook for 30 mins (adjust depending on size of vegetables)

  10. add pasta/barley/ebly and cook until tender

  11. NOTE: amount of salt not included in Sodium calculation
