Diane's variation on The Quiet Man Irish Pub Soda Bread, with aniseseed.

Recipe Ingredients for Diane's Irish Soda Bread

2 tablespoons butter
1 1/2 cups unbleached white flour
1 1/2 cups whole wheat pastry flour
1 tsp salt
1 tbsp baking powder
1 tsp baking soda
3/4 cup granulated sugar
1 cup raisins
1 3/4 cups buttermilk
2 eggs
1 tablespoon anise seeds

Recipe Directions for Diane's Irish Soda Bread

  1. Coat glass bread pan with butter.

  2. Heat oven to 350 degrees.

  3. mix dry ingredients in large bowl, add raisins.

  4. In another bowl, mix wet ingredients and melted butter. Add to dry ingredients quickly, don't overmix.

  5. Spoon batter into the baking pan, smooth top w/spatula. Put into oven quickly, as it begins rising right away.

  6. Bake 30 min at 350 and 30 min at 400. Bread will be puffed and golden brown.
