Recipe originally by Denise White (DBU?) - our family favorite (without the green peppers)

Recipe Ingredients for Diane's Chicken Enchiladas

2 sticks margarine
1/2 cup flour
1 lb chicken breast
1 cup cream of chicken soup
8 oz sour cream
1 dash garlic powder
2 tsp cumin
10 flour tortillas
24 oz red enchilada sauce
2 cups monterey jack cheese
1/2 onion
1/2 bell pepper

Recipe Directions for Diane's Chicken Enchiladas

  1. Boil chicken, cool and shred.

  2. Save chicken broth.

  3. Mix chicken, sour cream, soup, garlic, cumin, peppers, and onion.

  4. Put mixture in tortillas and place in backing dish.

  5. In a saucepan, make a white sauce: melted butter, flour, chili powder, and enchilada sauce.

  6. Pour white sauce over enchiladas.

  7. Top with shredded cheese.

  8. Bake @ 350 degrees for 30-45 min.
