My version, with no noodles, lots of vegetables (and you can substitute whatever you like--- this version happens to be my favorite one so far), and a small amount of carbs. SO good!

Recipe Ingredients for Diana's Spinach and Carrot Kugel

36 ounces of frozen spinach
4 eggs
1 teaspoon chili powder
1 tablespoon whole wheat flour
1 teaspoon salt
5 cloves garlic
1 tablespoon bread crumbs
3 cups shredded carrots
1 tablespoon olive oil
1 teaspoon lemon juice

Recipe Directions for Diana's Spinach and Carrot Kugel

  1. Heat oven temp to 375 degrees

  2. Leave eggs out so they come down to room temp

  3. Thaw out bags of spinach, then squeeze out as much water as possible.

  4. Mix the shredded carrots with the olive oil and lemon juice, then cook them in a covered pot on low heat until soft. Let them cool a bit.

  5. Crush/mince garlic (mortar and pestle works well)

  6. Beat eggs with all spices and garlic. Add in whole wheat flour, and beat till relatively smooth.

  7. Stir in vegetables

  8. Spread vegetable mixture into an oil-sprayed 8x8 pan, then sprinkle with the breadcrumbs (a super thin layer on the top of the kugel is plenty!)

  9. Pop in oven for 55 mins

  10. SO GOOD!
