Diana's Oatmeal Muffins - Frosted!

Recipe Ingredients for Diana's Oatmeal Muffins - Frosted!

2 cups rolled oats
2 cups almond breeze
1 cup unsweetened applesauce
1/2 teaspoon salt
2 teaspoons baking powder
1 teaspoon baking soda
2 cups flour
1 cup (1/2 pound) firm tofu
2 tbsp oil
2 tbsp lemon juice
4 tbsp maple syrup
1/2 tsp almond extract

Recipe Directions for Diana's Oatmeal Muffins - Frosted!

  1. Preheat oven to 400F.

  2. Soak oatmeal in liquid until softened, about 10-15 minutes.

  3. Add fruit pulp and mix.4Stir in salt, soda and baking powder.

  4. Add flour and stir to blend- Don't over stir!

  5. Bake until lightly browned and a toothpick inserted into the center of one of the muffins comes out clean, about 15 minutes.

  6. Blend icing ingredients and frost

  7. These freeze well.
