Recipe Ingredients for Diana's Chicken Curry

10 ounce chicken breast
2 small tomatoes, diced
1/2 onion, diced
1 stalk celery, diced
2 cups water
1/2 teaspoon salt
1 1/2 teaspoon curry powder
4 tablespoons fat free sour cream
1 1/2 tablespoons extra virgin olive oil

Recipe Directions for Diana's Chicken Curry

Chop up chicken into bite sized pieces. Heat medium sauce pan with olive oil and add chicken and saute for 5 minutes. Add vegetables and saute for 5 more minutes. Add water and other ingredients and stir until boiling. Put lid on pan & let simmer for 30 minutes. Serve over white rice, noodles or brown rice.
