Created from several online recipes after having terrific gazpacho in Barcelona. Makes 6 cups; serving size is 1 cup.

Recipe Ingredients for Diana's Catalan Gazpacho

1 slice, medium (4" x 2-1/2" x 1-3/4") Bread, French Or Vienna
7 tomato Tomatoes, Red, Ripe
1 small (6-3/8" long) Cucumber, Peeled
1 medium (approx 2-3/4" long, 2-1/2" dia) Peppers, Sweet, Green
1 clove Garlic
0.5 cup Olive Oil
3 tbsp Balsamic Vinegar
0.5 medium White Onion
1 tsp Salt, Table

Recipe Directions for Diana's Catalan Gazpacho

  1. Remove crust from bread.

  2. Peel garlic, tomatoes, cucumber; remove seeds from cucumber and green pepper.

  3. Cut vegetables into chunks (about 1"x1" or slightly larger).

  4. Put in blender and blend til there are no pieces left and it is all one color. Blend some more to be sure.

  5. Alternatives: Add 5 leaves fresh basil or 1/4 t cumin.

  6. Garnishes (optional): finely diced cucumber, red onion, scallions, red or green bell pepper, croutons.
