Recipe Ingredients for Diabetic Stuffed Mushrooms

2 pounds Mushrooms
1/2 cup Onion
1/2 cup Green Pepper
1 tablespoon liquid smoke
1 tablespoon balsamic vinegar
1/2 teaspoon garlic, minced fine
2 tablespoons Olive Oil
12 ounce cream cheese
1 cup Mozzarella Cheese
1 teaspoon season salt
2 ounces sausage

Recipe Directions for Diabetic Stuffed Mushrooms

  1. Cap Mushrooms, saving stems.

  2. Chop Stems

  3. Chop Onion

  4. Chop Green Pepper

  5. Mince Garlic

  6. Saute Sausage in Olive Oil

  7. Take out when crumbly and drain on paper towel.

  8. Chop mushroom stems and add with chopped onion, chopped green pepper, and minced garlic to pan in which you fried sausage.

  9. Saute mixture until dry.

  10. Add Liquid Smoke and Balsamic Vinegar

  11. Simmer for about 2 minutes

  12. Add sauted sausage and onion mixture to cream cheese and mix until well blended. Put in a plastic bag and place in refrigerator until ready to stuff and broil.

  13. Put Mushroom caps open side down on broiling pan.

  14. Sprinkle with olive oil.

  15. Cook in oven on 350 degrees for about 20 minutes.

  16. Take out of oven and allow to cool.

  17. Turn caps over so you can stuff them.

  18. When ready to serve, clip the corner of the plastic bag and fill mushroom caps with cream cheese mixture. Sprinkle with mozzarella cheese.

  19. Put in 350 degree oven for about 20 more minutes.

  20. Serve when cheese has browned.
