No granulated sugar necessary for this recipe--the pineapple juice provides all of the sweetness.

Recipe Ingredients for DIABETIC CAKE

3 large eggs
1/2 cup butter
1 cup unsweetened pineapple juice
2 1/2 cup unbleached white flour
3 c. grated carrots
1 tsp. baking soda
2 tsp. baking powder
1 tsp. nutmeg
1 tsp. cinnamon
1 cup Pineapple
1 tsp. cinnamon

Recipe Directions for DIABETIC CAKE

  1. Beat together eggs, butter and pineapple juice. Add flour, soda, baking powder and spices. Beat well. Stir in grated carrots and mix well.

  2. Pour mixture into greased and floured 9x13 inch pan. Mix drained pineapple and cinnamon and sprinkle over cake mixture. Bake 25-30 minutes at 350 degrees or until brown.
