Lentil Curry with mixed vegetables

Recipe Ingredients for Dhalcha

1 tblsp oil
1 medium onion,
2 cloves garlic,
1 tbsp ginger,
2 tsp black mustard seeds
2 tsp cumin
2 tsp coriander
2 tsp turmeric
1 cup of red lentils
1 cup of boiling water
5 small potatoes
3 carrots
1 cup of Broccoli florets

Recipe Directions for Dhalcha

  1. Cook the lentils in a small saucepan with 2 cups of cold water. Bring to the boil and simmer over a low heat for approx 15 mins until it reaches a porridge-like consistency.

  2. Heat a large pan and add the oil/ghee. Add the mustard seeds to the pan and fry until they start to pop, then add the onion, garlic and ginger. Fry until golden brown or at least soft, then add the spices and cook for a few minutes.

  3. Reduce the heat and add the cooked lentils, adding the boiling water as necessary to avoid the mixture sticking to the base of the pan. Add the vegetables and simmer in line with their cooking time ? eg. allow 20 minutes for potatoes and carrots etc., and less for broccoli or spinach.

  4. When the vegetables are finished cooking, add the salt and garam masala.
