Good, maybe a tad dry. Amazing with frosting.

Recipe Ingredients for Devil's Food Cupcakes

1 cup flour
6 tbs unsweetened cocoa
1/2 tsp baking soda
1/4 tsp baking powder
1/4 tsp salt
1/2 cup unsalted butter, soft
1 cup sugar
2 eggs, room temp
1 egg yolk, room temp
1/2 tsp vanilla
1/2 cup water

Recipe Directions for Devil's Food Cupcakes

  1. Mix flour, cocoa, baking soda, baking powder and salt.

  2. Beat butter in mixer at medium speed until smooth, about 2 min. Increase speed to med-high and gradually add sugar. Beat until light and smooth, about 5 min. Reduce speed to med-low and beat in whole eggs and yolk 1 at a time, incorporating each fully before adding next. Beat in vanilla. Scrape down bowl.

  3. Bring water just to a boil and remove from heat.

  4. On low speed, beat the flour mixture into the butter mixture in 4 additions. Drizzle in hot water and mix briefly to make smooth batter.

  5. Fill muffin cups 2/3 of the way full.

  6. Bake until centers of cakes spring back, about 20 min
