preparation: trim all but a 1/4" of fat from the chops. Slash remaining fat at one-inch intervals to prevent chops from curling when cooked. roll basil leaves into tight cylinders then slice crosswise to form slivers.

2 1tsp Olive Oil
4 tsp(5 g) Dijon Mustard
0.33 cup leaves, whole Basil, Fresh
0.5 tsp Ground Black Pepper
0.25 serving Cayenne Pepper

Recipe Directions for Devilish pork chops

  1. 1. Combine mustard, olive oil, basil, black pepper and cayenne. Spread mixture all over chops.

  2. 2. let sit covered for one hour.

  3. 3. brush grill rack lightly with oil. sear chops over high heat, 1 min per side, including edges.

  4. 4. cook covered, with vents open, over medium high heat for 8 min. turn, cook another 8 min.

  5. 5. when done, instant-read thermometer will read 165F (any higher will result in dry, tough chops). serves 1
