Deviled Summer Squash Recipe

vegetarian side dish that is great for bumper crops of zucchini. Recipe calls for fresh tomatoes, but since I didn't have them, I substituted salsa. Add a dash of tabasco if is you want more kick. When I serve it, I always sprinkle it with fresh scallions.

Recipe Ingredients for Deviled Summer Squash

3 zucchini
2 clove garlic
1 red onion
3 oz cream cheese
1 jalapeno pepper
1 cup salsa
1 pita loaf
1 cup mushroom slices
1 pam spray

Recipe Directions for Deviled Summer Squash

  1. sautee onion, jalapeno, and mushrooms

  2. slice zucchini thinly and blanche

  3. blend in cuisinart salsa (or fresh tomatoes), cream cheese, and garlic

  4. mix all the above ingredients together

  5. pour into baking dish

  6. pulse pita into bread crumbs

  7. layer crumbs on top. bake at 375 for 25 mins. or until golden
