Recipe Ingredients for Deviled Eggs

6 hard boiled eggs
1/4 cup lite mayonnaise
3/4 teaspoon mustard
1/2 teaspoon lemon juice

Recipe Directions for Deviled Eggs

  1. Cut the eggs in half lengthwise and remove the yokes and place thme in a bowl.

  2. Set aside whites on a contoured egg serving tray.

  3. Wipe your knife with a damp towel between each cut to make a clean cut.

  4. Pass the yokes through a wire strainer.

  5. Mix the mashed yokes with mayonnaise, mustard, lemon juice and salt and pepper.

  6. Refill the whites using about a tablespon of the yoke mixture for each egg half.

  7. Finish off by garnishing with chives and a sprinkle of paprika.
