Deviled Chicken Breasts from "Healthy Cooking for Two (Or Just You)" by Frances Price, RD, p. 158

Recipe Ingredients for Deviled Chicken Breasts

344 grams (4) chicken breast halves, with bone, about 10 ounces each
1/4 cup Dijon mustard
1/4 cup dry white wine
1 tablespoon olive oil
1/2 teaspoon dried thyme
1/4 cup minced shallots or onions
1 cup bread crumbs, soft white

Recipe Directions for Deviled Chicken Breasts

  1. Preheat the oven to 375 degrees. Line a baking pan with heavy foil.

  2. Remove the skin from the chicken breasts.

  3. In a small bowl, whish together the mustard, wine, oil and thyme. Stir in the shallots or onions.

  4. Place the bread crums in a shallow dish or on a piece of wax paper.

  5. Roll the chicken int he mustard muxture, then in the bread crumbs to coat. Arrange in a single later int he prepared pan and bake on the top shelf of the oven for 35 to 45 minutes or until the crumb coating is browned and the juices are clear when the breast is pierced with a fork. Serve hot or cold.
