Use this recipe for pithy fruit that cannot be eaten fresh. Works with apples, pears, berries, or just about any fruit.

Recipe Ingredients for Dessert: Pithy Peach Cobbler


For filling:
3 cups chopped peaches (1 to 1 1/2? pieces), about 3 large peaches
2 T. brown sugar
2 T. granulated sugar
1 T. flour

For topping:
1/3 c. whole wheat pastry flour
1/3 c. oats
3 T. brown sugar
2 T. granulated sugar
1/2 tsp. cinnamon
1 pinch of salt
4 T. butter, melted

Recipe Directions for Dessert: Pithy Peach Cobbler

  1. Mix filling ingredients. Place in an 8x8 pan.

  2. Mix dry ingredients for topping. Stir in melted butter until evenly moist. Sprinkle over filling.

  3. Bake at 375F for 30 minutes, until filling is bubbly.

  4. Serve over vanilla ice cream, if desired.
