This recipe doesn't include the calories for a 9" pie crust - must add it separately to food log. Can use either walnuts or pecans.

Recipe Ingredients for Derby-ish pie - chocolate pie

6 tbsp butter
8 oz. chocolate chips
3 large eggs
1 tsp. vanilla extract
1/4 tsp. salt
1 cup brown sugar
2 tbsp. all-purpose flour
3/4 cup chopped walnuts

Recipe Directions for Derby-ish pie - chocolate pie

  1. Preheat oven to 400 degrees. Prick the bottom of the unbaked pie crust with the tines of a fork. Cover with aluminum foil, including the edges, and weight down with dry beans or baking pellets (I used a glass flat bottom bowl). Bake for 10 minutes, remove foil and continue baking for 5 minutes. Remove from the heat and set aside. Reduce heat to 350 degrees.

  2. Heat the butter and 1/3 cup of the chocolate chips in a double boiler or a small saucepan over low heat and cook, stirring frequently, until the butter and chips have melted (I did this in the microwave for ~30 secs or so). Stir to blend and set aside.

  3. Beat the eggs, vanilla extract, salt, brown sugar and flour together until well blended. Add the melted butter mixture. Fold in the remaining chocolate chips and the nuts. Spoon into the partially baked pir crutst. Bake until golden brown, about 45 minutes. Let cool on a rack. Makes 1 pie.
